Sweet Potato (commonly called a yam in parts of the US) are the starchy tuberous roots of Ipomoea batatas a member of the Convolvulaceae (bindweed) family. The plant itself is a herbaceous perennial vine that's commercially grown as a foodstuff. The plant originates in the tropical zones of the Americas though the largest producer these days is China. The plant's edible tuberous root is long and tapered, with a smooth skin whose colour ranges between red, purple, brown and white. Its flesh ranges between white, yellow, orange, and purple.
Sweet potatoes can be cooked in a variety of ways and many of these are similar to the preparation techniques for true potatoes: boiling, mashing, roasting or as an addition to soups and stocks. When cooked a sweet potato has a slightly sweet creamy flesh that's lighter and fluffier than that of a potato. They also make a wonderful addition to curries because of the sweet notes in the flesh.
