Gratin de pommes de terre des Antilles (Antilles Potato Gratin) is a traditional Guadeloupean recipe for a classic accompaniment of potato of sweet potato cooked in a coconut milk and milk sauce with goat cheese. This is a Guadeloupean version of the traditional French
Gratin de pommes de terre that can be prepared with potatoes or sweet potatoes.
Ingredients:
250ml milk
250ml coconut milk
1 red bell pepper, diced
125g goat cheese, graced
1 garlic clove, minced
1 tbsp plain (all-purpose) flour
1 tsp sea salt
1/4 tsp freshly-ground black pepper
1/8 tsp freshly-grated nutmeg
1/4 tsp ground allspice
1 tsp
Creole seasoning
1/2 tsp cayenne pepper
1kg potatoes (or white sweet potatoes), peeled and sliced thinly
Instructions
Pre-heat your oven to 200C.
Method:
In a large bowl, whisk together the coconut milk, milk, goat cheese, garlic, flour, salt, pepper, Creole seasoning, cayenne pepper, allspice and nutmeg.
Arrange potato slices in a single layer in a medium-sized greased baking dish. Pour 1/4 of the milk mixture over the top, then add another layer potato slices and pour over another 1/4 of the milk mixture. Repeat with the remaining potato slices and milk mixture until you reach the top of the dish (finish with the milk mixture).
Transfer to the centre of your pre-heated oven and bake for 70 minutes, or until the potatoes are tender and the top of the dish is bubbly.
