Pickle Chicken Curry

This is a classic recipe from Mumbai for a chicken curry made with cider vinegar, hence the name.

Ingredients:

2 tbsp mustard oil, for frying
2 medium brown onions, finely sliced
1½ tsp ground coriander seeds
5 tsp Kashmiri chilli powder
4 garlic cloves, finely minced
8 boneless, skinless chicken thighs (about 675g [1¼ lbs]), cubed
2 tsp fine sea salt
1/2 tsp freshly-ground black pepper
5 tbsp tomato purée
generous pinch of brown sugar
6 tbsp cider vinegar
2 small sweet potatoes, peeled and cut into small cubes

Method:

Place a large pan over medium heat. Once hot add the oil and use to fry the onions with a pinch of salt until browned (about 20 minutes).

Scatter over the ground coriander, chilli powder and minced garlic. Fry, stirring constantly for 2 minutes, until aromatic. At this point add the chicken season with the salt and black pepper and fry for 5 minutes, until the chicken pieces are nicely browned.

Stir in the tomato purée and sugar then pour over the cider vinegar and stir well to combine. Now add the sweet potato cubes and stir again. Bring to a simmer, cover with a lid and cook over low heat for 20 minutes, stirring occasionally.

Remove the lid and, allow the gravy to chiken for 5 minutes. Adjust the seasonings to taste and serve on a bed of white rice.
