Sancochi di Galinja (Chicken Stew)

Ingredients:

1 chicken (about 1.5kg) washed and cut into serving pieces
3l beef stock
4 large tomatoes, blanched, peeled, de-seeded and coarsely chopped
2 medium corn on the cob cut into 8cm lengths
2 medium sweet potatoes, peeled and sliced into 1cm rings
2 small potatoes, peeled and cut into 1cm dice
220g green peas
2 small, hot, chillies, finely sliced
salt and freshly-ground black pepper, to taste
2 tbsp finely-chopped spring onions (green part only)

Method:

Combine the chicken and stock in a large pan. Bring to a boil over high heat and skim-off any fat with a slotted spoon as it rises to the surface of the pan. Reduce to a low simmer and partially cover with a lid. Continue cooking for about 45 minutes, or until the chicken is almost done.

Skim off any fat that's risen to the surface then add all the vegetables and spices (except the spring onions). Return to a boil then reduce to a simmer and cook for a further 20 minutes. Stir-in the spring onions and serve ladled into bowls.
