Sopi Mondongo (Soul-food Soup)

Sopi Mondongo (Soul-food Soup) is a traditional Aruban recipe for a classic soup made from a broth of boiled cow's stomach, cow's feet and marrow bone with vegetables and sweet potatoes. Ingredients:

450g cleaned cow's stomach, cut into chunks (I usually use honeycomb tripe)
450g cow's feet (or 900g marrow bones)
450g marrow bone
1 tsp freshly-ground black pepper
1 tbsp salt
2 beef stock cubes
2l water
1 onion, diced
1 green bell pepper, diced
1 celery stick (with leaves), diced
5 fresh basil leaves, finely shredded
1 sweet potato, peeled and cut into chunks
1 tsp sugar
generous pinch of ground cumin

Method:

Combine the cow's stomach, feet and bone in a large soup pot. Add the pepper, salt, beef stock cubes and water. Bring the mixture to a boil then reduce to a brisk simmer and cook for about 2 1/2 hours, or until the tripe is soft.

Pass through a strainer and return the stock to the soup pot. Add all the remaining ingredients and return to a boil. Reduce to medium heat and cook for about 20 minutes, or until the vegetables are completely soft. Take off the heat, set aside to cool for 10 minutes then ladle into warmed soup bowls and serve.
