Daraba

Ingredients:

20 fresh okra, chopped
3 tomatoes, chopped
200g mixed greens, finely shredded (a chiffonade)
1 sweet potato, cubed
1 aubergine, cubed
200ml peanut butter
1 Maggi or stock cube
salt, black pepper and cayenne pepper to taste

Method:

Add the vegetables to a pot, cover with water and season. Bring to a boil, reduce to a simmer and cook for half an hour, or until the vegetables are almost done. Remove 200ml of the stock and mix with the peanut butter to form a smooth sauce. Add the peanut butter and the stock cube to the vegetables and simmer for 10 minutes, or until the sauce has thickened.

Serve with rice or boiled plantains or boiled yams.
