Kittitian Style Conkies

Kittitian Style Conkies is a traditional Kittitian and Nevisian recipe for a classic boiled dumpling made from a blend of grated sweet potatoes, coconut and pumpkin that's blended with flour and which incorporates raisins and spices. Ingredients:

300g plain (all-purpose) flour
300g white Sweet potatoes, grated (about 2 sweet potatoes)
80g Grated coconut (about 1/2 coconut)
150g Grated pumpkin (eq: 1/4 pumpkin)
125ml Water (may need more if the batter is too dry)
100g Granulated sugar
55g Raisins
1 tsp Vanilla extract
1/4 tsp ground cinnamon
1/4 tsp Almond essence
1/4 tsp freshly-grated nutmeg
Banana leaves or foil or greaseproof (waxed) paper

Method:

To prepare the batter: In a bowl mix together the grated coconut, pumpkin, sweet potato, flour, spices, sugar, vanilla extract and almond essence. While mixing the base, slowly pour in the water until you have a thick, smooth, batter.

Wrapping the conkies: If you are using fresh banana leaves then you need to wash them and quickly pass them over a flame to soften them. However, if you obtained the leaves from the grocery store then they have already been prepped and washed.

Spoon 3-4 tbsp of the batter to the centre of the leaf. Take the top and bottom sides of the leaf and bring them to the centre, then take each end and bring them to the centre. Using a string, wrap it around the leaf being sure to tie the ends together. Make sure to wrap the conkies tightly so water can’t get into them.

If using foil paper: Spoon 3-4 tablespoons of the batter to the centre of the foil or paper then wrap it tightly as described above.

Boiling the conkies: Place the wrapped conkies into a large pot and cover with water. Bring to a boil and cook for 45 minutes to 1 hour until cooked through.

Drain the conkies and serve in their wrapping so your diners can unwrap them.

Enjoy warm with some saltfish or as a snack.

Once cooked, conkies will typically last for up to a week in the refrigerator.
