This is a South African Afrikaans dish that is typically served as an accompaniment to a curry or potjekos (South African stew).

South African sweet potatoes are typically white and nowhere near as sweet as the orange sweet potatoes found elsewhere. So, the sugar in this recipe both lends sweetness and caramelization which lend an interesting contrast to a very spicy curry.

For me, the dish is almost a dessert so much so that I have adapted it as a sweet potato pie (similar to pumpkin pie), but more of that in a later post.

This recipe is super easy to make and it can be prepared a few days ahead, great if you are preparing a braai (barbecue) or a pot-luck style dinner.

Ingredients:

4 sweet potatoes (about 500g/1lb), peeled and cut into thick slices
180g (1 cup, scant) brown sugar
4 pieces of cassia bark (you can substitute cinnamon sticks)
4 tbsp butter
salt to taste

Method:

In a heavy-bottomed metal casserole (a Dutch oven is traditional) layer half the butter, sweet potato slices, sugar, salt and cinnamon sticks.

Start again with butter for the next layer and continue with the sweet potato, sugar, salt and cinnamon until done. Place the lid on the pot and place on low heat on the stove for about 2½ hours.

The dish can also be baked in a moderate oven or cooked slowly on a braai (barbecue). It can also be made ahead of time and will keep for two days in the refrigerator, if needed.
