Also known as Ringa Ringa this is a classic stew of sweet potato leaves with Ground Peanuts, Tomatoes and red palm Oil

Ingredients:

500g sweet potato leaves, washed and very finely shredded
200ml red palm oil
1 large onion, chopped
1 Maggi cube (or bouillon cube)
1 smoked fish, washed and broken into small pieces (optional)
1 tbsp ground crayfish (this is optional and used as a thickener)
500ml water

Method:

Combine the water, ground crayfish and Maggi cube in a saucepan. Bring to a boil then stir in the red palm oil along with the onion. Bring to a boil and cook for 40 minutes.

When done, you will see a film of oil on the surface of the stew.

Adjust the seasonings to taste and serve hot accompanied by rice or fufu.
