Curried Sweet Potato Soup

In Maori, the sweet potato is known as kumara and used to be one of the carbohydrate staples in the diet. This modern recipe from New Zealand is more of a fusion dish however.

Ingredients:

1 large sweet potato (about 250g), peeled and grated
1 medium onion, chopped
1 garlic clove, minced
1/2 tsp fresh ginger, finely grated
120ml vegetable stock
250ml milk
120ml coconut milk
1 tbsp curry powder
salt and freshly-ground black pepper, to taste
ground cumin, to taste

Method:

Heat a little oil in a pan, add the onion, garlic and ginger and fry for about 8 minutes, or until the onions are golden. Stir in the curry powder and cook for 1 minute more.

Add the sweet potato to the fried vegetables and continue frying, stirring frequently, for 2 minutes further (add a little more oil, as needed). Pour in the vegetable stock and stir to combine. Bring to a simmer and continue cooking for about 5 minutes, or until the sweet potatoes are almost tender.

Take off the heat, allow to cool slightly then purée in a food processor until smooth. Scrape the purée into a saucepan then heat, as you work in the coconut milk and milk, stirring constantly. Once all the ingredients have been combined, season to taste with salt, black pepper and cumin. Allow to heat through, but do not boil.

Ladle into warmed soup bowls and serve garnished with shredded parsley, coriander or dill leaves.
