Ojojo Meat Balls is a traditional Nigerian recipe for a classic dish of beef meatballs with bell peppers, potatoes and sweet potatoes that are pan-fried before being served with rice and greens. Ingredients:
900g minced beef
2 green bell peppers, finely chopped
1 medium onions, finely chopped
1 tbsp salt
250g white potatoes, peeled and grated
250g sweet potatoes, peeled and grated
3 eggs
salt and black pepper to taste
oil for frying
Method:
Mix all the ingredients together, adjust the seasoning then place in a fridge for at least 1 hours to set. Once chilled form the mixture into 6cm balls. Add oil to a depth of about 5cm in a wok and heat. Add the meatballs a few at a time and brown on all sides.
