This recipe is a perfect representation of a common Portuguese meal, its delicious simplicity, just some boiled veggies and some quick fried small mackerel with a bit of flour to be more crispy, its pretty nice if I say so myself. A lot of times these fried horse mackerel are served with tomato rice (because its a bit tart and that combines well with the sweetness of the fried fish) but here it's accompanied by sweet potatoes and green beans.
Ingredients:
300g Green Beans, topped and tailed
2 Sweet Potatoes, peeled and cut into chunks
3 Garlic Cloves, minced
drizzle of Olive Oil
chilli powder, to taste
sea salt, to taste
4 small Horse Mackerel (about 120g each), cleaned scaled and gutted
plain flour, for dusting

Method:
Bring a pan of lightly-salted water to a boil then add the sweet potatoes and green beans and cook for about 20 minutes until tender.
In the meantime, wash the fish and pat dry. Sift some flour onto a plate then heat oil in a wok or deep fryer to 180°C.
Dust the horse mackerel on both sides with the flour until nicely coated. Shake off the excess flour then fry in the hot oil for about 12 minutes, until crisp on the outside and cooked through.
Drain on kitchen paper then drain the cooked sweet potato and green beans in a colander. Transfer to a warmed serving bowl then garnish with salt, chilli pepper, the garlic and a drizzle of olive oil.
Arrange the mackerel on a plate and serve accompanied by the sweet potatoes and green beans.
