Ducuna is a traditional Anguillan recipe for a classic dessert of individual sweet potato and raisin dumplings. The full recipe is presented here and I hope you enjoy this classic Anguillan version of: Ducuna.
Peel and grate the sweet potatoes into a bowl then mix in the sugar then cover and set aside for 2 hours (this will extract the excess water from the sweet potatoes). Stir-in the spices and raisins then add the flour and stir to combine (if the mixture looks a little dry add some water to form a soft dough. If too watery then add a little more flour).
Spoon just over a tablespoon of the mixture into squares of greaseproof paper. Twist to seal then cover completely in kitchen foil so the packages are watertight. Drop the ducunas in a pan of boiling water and boil for about 45 minutes, or until firm. Remove from the water with a slotted spoon and allow to cool before unwrapping carefully.
