If you like sweet potatoes, you will love these sweet potato wedges. You can eat the skin and flesh on sweet potatoes but you need to oil them to make them crisp in the air fryer. Also, though sweet potatoes in Europe tend to be of the orange kind here in Africa white sweet potatoes are the commonest, followed by jewelled (pink) and there is a fantastic new variegated variety (white and purple). Orange sweet potatoes are not so common, though I did manage to source some for this recipe. Though for this recipe the sweet potato varietal does not really matter, they all work. Just, if you can only get white sweet potatoes chose the smaller, younger, ones and these will have firmer flesh.
Ingredients:
4 Medium Sweet Potatoes
2 tsp Extra Virgin Olive Oil
2 tsp Paprika
2 tsp
Cajun seasoning
1 tsp Parsley
Salt and freshly-ground black Pepper
Method:
Scrub your sweet potato skins to clean. If desired you can peel them, but I tend to leave the skins on, then slice your sweet potatoes into wedges.
Place the sweet potato wedges in a bowl with the seasonings and extra virgin olive oil, then use your hands to thoroughly mix them together.
Transfer to the basket of an air-fryer pre-heated to 200°C (400°F) and cook for five minutes. After this time shake the air fryer basket, check with a fork that your wedges are cooked and then cook for a further 5 minutes at 200°C/400f.
Serve and enjoy.
You can use whatever seasonings you like; the combination of cajun seasoning and paprika here approximates the spices used by KFC. But you can base on whatever taste profile you like (Szechwan seasoning is good to give an Asian flavour).
