Ingredients:
2kg sweet potatoes (white for preference), peeled and cut into thin slices
1l water
1kg fresh peanuts
250ml water
salt and freshly-ground black pepper, to taste
Method:
Combine the sweet potatoes and 1l water into a pan. Bring to a boil and cook for about 20 minutes, or until tender. Drain the potatoes then layer into a casserole dish (season each layer as you add them). Transfer to an oven pre-heated to 50°C to keep warm.
Now grind the peanuts in a coffee grinder and mix with the 250ml water to form a paste. When all the peanuts have been mixed in with the water pour this over the sweet potatoes.
Increase the oven temperature to 180°C and bake the mixture for 15 minutes more then serve.
This is typically served with various poultry dishes and fried onions.
