Also known as mantindjan this is a classic green sauce from Benin.

Ingredients:

2 tbsp oil
3 garlic cloves, finely chopped
1/2 onion, chopped
1 small tomato, chopped
2 tbsp tomato puree
100ml sesame seed paste (tahini)
1 tbsp Piment (Scotch Bonnet chillies pounded to a paste)
350g greens (traditionally cassava greens, sweet potato leaves etc. Substitute collard greens if not available) shredded
1 smoked, dried fish, flaked
1 Maggi (or bouillon) cube

Method:

Add the oil to a pan and use to gently fry the onions, garlic, piment and tomato for a few minutes. Add the tomato puree and sesame seed paste and stir-in before adding the Maggi cube, 500ml of water and the dried fish.

Allow to simmer for 15 minutes then add the greens and cook for a further 5 minutes. Serve with rice or Ingame.
