This recipe calls for steamed sweet potatoes, which are easy enough to prepare. To steam cook sweet potatoes, simply peel them, cut into chunks then put in a steamer basket over boiling water. Cover with a lid and steam for 15-20 minutes, until tender. For the below recipe mash until smooth then set aside to cool. This makes an excellent snack at any time but is also good as a treat for Diwali.

Ingredients:

4 large sweet potatoes, steamed (see cooking techniques) and mashed
175g (1 cup + 2 tbsp) rice flour
4 tbsp honey
20 cashew nuts, lightly roasted and chopped
20 raisins
Salt to taste
2 tsp sesame seeds
Ghee for deep frying

Method:

Mix together all the ingredients, (except the ghee and the sesame seeds) in a bowl until thoroughly combined.

Form walnut-sized balls and roll each one in the sesame seeds to coat.

Heat the ghee in a wok or deep pan. When the ghee is hot use to deep fry the sweet potato balls over medium heat till golden brown.

Serve hot.
