Boulettes de Viande (Beef Meatballs) is a traditional Gabonnaise (from Gabon) recipe for a classic meatball made from a blend of minced beef, minced veal and mashed sweet potato bound with egg and flavoured with onion and garlic. Ingredients:
200g minced (ground) beef
250g minced (ground) veal
1 white onion, minced
2 garlic cloves, minced
1 egg yolk
1/2 boiled white sweet potato (or 1/2 a large potato), mashed
1 tbsp fresh parsley, finely chopped
plain flour
olive oil
salt and freshly-ground black pepper, to taste
Method:
Combine the meat, onion, garlic, egg yolk, potato half, parsley and seasonings in a bowl. Mix well to combine then divide into 12 portions and shape into meatballs.
Dust the meatballs with flour. Heat oil in a pan, add the meatballs and fry for about 10 minutes, or until golden brown and cooked through.
