Bufuke with Onion Sauce

Bufuke is a traditional Ugandan mash of sweet potatoes, beans and peanuts. Here it's served with on onion and tomato sauce.

Ingredients:

4 medium sweet potatoes, peeled and diced (orange ones are best)
70g dried kidney beans, soaked over night
75g mung beans (dengu), soaked over night
120g peanuts, blanched and shelled
1 tbsp margarine (or butter)
salt and freshly-ground black pepper, to taste

For the Sauce:
6 tomatoes, peeled and sliced
3 onions, sliced
hot chilli powder, to taste
250ml vegetable stock, hot
1 tsp plain flour
250ml coconut milk (or soy milk)
oil, for frying

Method:

Drain the beans then combine in a large pan with the peanuts. Cover with water, bring to a boil then keep boiling gently for about 20 minutes, or until half cooked. Add the sweet potatoes then season to taste. Return to a low boil and cook for a further 20 minutes, or until the sweet potatoes are tender.

Drain the water then mash the sweet potatoes and beans together using a fork and 1 tbsp margarine (or butter).

In the meantime, prepare the sauce. Heat a little oil in a pan, add the onions, tomatoes and chilli powder. Fry for about 5 minutes, or until the onions are soft, but not browned, then add the hot stock, bring to a simmer and cook gently until the mixture starts to thicken.

Using a small bowl, slowly combine the flour and the coconut milk (or soy milk), a little at a time, stirring thoroughly to mix with a fork after each addition. Once the mixture is smooth add to the onion and tomato mixture. Continue cooking, stirring frequently, over medium heat until the mixture becomes thick.

To serve, heap the bufuke on a large serving dish, pour over the thickened sauce and serve.
