Gestowe Soetpatats (Slow-cooked Sweet Potatoes) is a traditional South African recipe for a casserole of sweet potatoes (typically white), sugar and spices traditionally served as an accompaniment to a curry. Ingredients:
4 sweet potatoes, skinned and cut into thick slices
180g brown sugar
4 cinnamon sticks
4 tbsp butter
salt to taste
Method:
In a heavy-bottomed metal casserole dish layer half the butter, sweet potato slices, sugar, salt and cinnamon sticks. Start again with butter for the next layer and continue with the sweet potato, sugar, salt and cinnamon until done. Place the lid on the pot and place on low heat on the stove for about 2½ hours.
The dish can also be baked in a moderate oven and will keep for two days in the refrigerator, if needed. Serve with a South African curry.
