Spicy Sweet Potato Slices: Classic British recipe for a barbecue dish of sweet potatoes that are parboiled, brushed with oil, chilli sauce and seasonings and cooked on a barbecue.

Ingredients:

500g sweet potatoes, scrubbed clean but not peeled
2 tbsp sunflower oil
1 tsp chilli sauce
salt and freshly-ground black pepper, to taste


Method:

Bring a large pan of water to a boil. Add the sweet potatoes and parboil f0r 10 minutes. Drain well, then transfer to a chopping board.

As soon as the potatoes are sufficiently cool to be handled peel them and cut into thick slices.

Mix together the oil, chilli sauce and seasonings int a small bowl. Brush this liberally over one side of the sweet potatoes then set the potatoes, coated side down, on an oiled barbecue grill rack set over medium coals. Cook for about 5 minutes.

At this point, lightly brush the tops of the potatoes with the oil mixture then turn them over and cook for 5 minutes more, or until crisp and golden on the outside and cooked all the way through.

Transfer the potatoes to a warmed dish and serve immediately.
