Salsa is a classic Spanish relish that's made from chopped tomatoes, onions, chillies and peppers and which is invariably served cold. In Spanish the word literally means 'sauce' and it can be used as the basis for a stew. Indeed, salsa can be cooked and used as a topping for pasta. It is also possible to make fruit versions of salsa that go excellently with fish or chicken.
