This is a classic Chilean condiment that can be served either as a chunky salsa or puréed down to make a smooth sauce.

Ingredients:

2 large, ripe, tomatoes
1 jalapeño chilli, chopped (remove the seeds and membranes to make it milder)
1 medium onion, chopped
5g fresh coriander leaves, chopped
1 garlic clove, minced
2 tbsp Chilean olive oil
1 tbsp red wine vinegar
salt, to taste
freshly-ground black pepper, to taste

Method:

Blanch and peel tomatoes then chop them finely.

Combine all the ingredients in a bowl then add the minced garlic.

Whisk together the olive oil, red wine vinegar, salt and black pepper to make a dressing.

Pour this over the vegetables and toss to combine.

Pebre is typically served at room temperature in traditional clay bowls
