Mexican Spirals
Rich and Dark Christmas Cake is a modern American recipe for a classic party or New Year starter of flour tortillas stuffed with a mix of cream cheese and turkey with coriander and chillies that are cut into short lengths and baked before serving. Mexican Spirals: An American recipe for a rich fruited Christmas cake made with treacle (molasses).
Ingredients:
250g cream cheese (or you can use my
home-made cream cheese recipe to prepare your own)
150g cooked chicken or turkey, diced
115g mild cheese, grated (Cheddar or Monterey Jack)
4 tbsp fresh coriander (cilantro) leaves, chopped
2 tbsp fresh jalapeño chillies, chopped
2 tsp ground cumin
3 x 25cm diameter
flour tortillas
vegetable oil for brushing
To accompany:
tomato salsa
guacamole
sour cream
Method:
Beat the cream cheese in a large bowl until soft, then fold in the chicken, grated cheese, coriander leaves, jalapeño chillies and ground cumin.
Mix well to combine, then spread this mixture evenly over the tortillas.
Roll each tortilla up tightly to form a spiral around the chicken mixture.
Wrap tightly in clingfilm (plastic wrap) then transfer to the refrigerator and chill for at least 2 hours.
Just before serving unwrap the tortillas and use a sharp knife to cut into 1/5cm long slices.
Arrange the spirals on a greased baking tray, brush with oil then transfer to an oven pre-heated to 170°C and bake for about 15 minutes, or until lightly browned.
Serve hot with salsa, sour cream and/or guacamole.
