Guacamole
Guacamole is a traditional Mexican recipe for a classic dip or topping of mashed avocado mixed with onion, chillies, coriander lime juice and tomato that is used as a dip for corn chips or a topping for a range of Mexican dishes. Originally from Mexico, and the name itself is derived from two Aztec words (in the Nahuatl language):
ahuacatl (avocado) and
molli (sauce). These days it is a feature of Mexican, New Mexican and Texan cuisine. The following recipe is a traditional one from Mexico.
Ingredients:
2 ripe avocados/span>
1/2 red onion/span>, minced
2 serrano chillies/span>, with stems and seeds removed, minced
2 tbsp
coriander leaves/span>, finely chopped
1 tbsp fresh lime juice/span>
1/2 tsp coarse sea salt/span>
a few twists of freshly-ground
black pepper/span>
1/2 ripe tomato/span>, de-seeded and chopped
thin slices of radish to garnish/span>
Method:
Cut the avocados in half, remove the stone and scoop out the flesh. Add this to a mixing bowl and mash with a fork. Now add the onion, coriander, lime juice, salt and pepper. Continue mashing to combine. At this point you can store in the refrigerator until needed.
When you are ready to serve add the chopped tomatoes and mix in. Transfer to a serving bowl, garnish with the radish and serve.
