Pollo con Salsa de Cacahuetes (Chicken with Peanut Sauce): An Equatorial Guinean recipe for a classic stew of chicken pieces in a peanut paste base with tomatoes, garlic and onions.

Ingredients:

1 medium chicken
3 tomatoes, finely chopped
2 garlic cloves, finely chopped
1 white onion, finely chopped
1 sprig of parsley, finely chopped
250g peanut paste (or peanut butter)
salt and freshly-ground black pepper, to taste
1/2 tsp hot chilli, pounded to a paste

Method:

Clean and wash the chicken. Place in a pot, add 200ml water along with the onion, tomatoes, garlic and parsley.

Season with the hot chilli, salt and black pepper then bring to a boil. Cover and cook for 15 minutes then add 1l water and stir in the peanut paste.

Mix well to combine, bring to a simmer, cover and cook gently over low heat for about 45 minutes, or until the sauce is thick and the chicken is very tender.

Joint the chicken and serve with the sauce accompanied by boiled yams, cooked beans boiled cassava or rice.
