Dominican Chimichurri Burgers

A saucy, simply seasoned burger, topped with sautéed cabbage, tomato and onion, the Chimichurri Burger – aka 'Chimi' – this is Dominican street food at its finest.

Ingredients:

1kg minced beef
4 tbsp Worcestershire sauce
5 tbsp soy sauce, divided
4 tsp garlic powder, divided
2 tsp onion powder
1 tsp sea salt
1 tsp freshly-ground black pepper
250g cabbage, shredded finely
1 tsp olive oil
1 large tomato, sliced into thick rounds
¼ red onion sliced
4 bread rolls (pan de agua (water buns), split and toasted

For the Salsa Golf:
120ml tomato ketchup
120ml mayonnaise
¼ tsp soy sauce

Method:

In a large bowl, combine the minced beef, Worcestershire sauce, 3 tbsp soy sauce, 2 tsp garlic powder, onion powder, salt, and black pepper. Mix well to combine, then divide into 4 equal portions and shape into patties.

Place a grill pan over medium heat. Grease the pan with an oiled cloth than add the patties, and cook for about 8 minutes for medium-rare, turning once. Once cooked to your liking, remove from the pan and set aside on a plate.

Place a frying pan over medium heat. Add cabbage, remaining soy sauce and garlic powder, and stir-fry for 4-5 minutes. Once cooked, transfer the cabbage to a bowl and set aside.

Slice your bread buns in half and toast lightly, add the meat patties, top with the salad then spoon over the salsa golf. Sit the top bun piece on top and serve.
