Mexican Chicken Pizza is a traditional American recipe for a classic cornmeal pizza base topped with salsa, chicken cooked in taco seasoning and topped with Monterey Jack and Velveeta cheese. Turn the dough onto a lightly-floured work surface and roll into a 25cm diameter circle. Transfer to a greased baking tray then using your thumb and forefinger roll the edges of the pastry to form a rim. Cover and allow place in a warm spot to raise for 10 minutes.
Fry the chicken in a little oil until browned all over and cooked through then add the taco seasoning and stir to combine before taking off the heat. Spread the salsa over the pizza base, going almost to the edge. Top with the chicken then mix the cheeses and scatter over the top.
Place in an oven pre-heated to 200°C and bake for about 18 minutes, or until the edges of the base are golden and crisp. Garnish with the coriander leaves, serve immediately, cut into wedges.
