Enchiladas (Stuffed Tortillas with Chilli Sauce): A Spanish recipe for a dish of flour tortillas with a beef, chilli and cheese filling served in a red chilli sauce.

Ingredients


1 tbsp vegetable oil
18 flour tortillas
450ml salsa de chile rojo (red chilli sauce)
3 tbsp freshly-grated Parmesan cheese

For the Filling:
25g butter
1 onion, finely chopped
225g minced beef
50g Monterey Jack (or Cheddar) cheese, grated
salt and freshly-ground black pepper, to taste
1 small dried hot chilli, crumbled

Method:

For the filling, melt the butter in a frying pan. Add the onion and fry until soft. Stir in the beef and fry until it is no longer pink (break up any large clumps with a spoon during the cooking process). Take the pan off the heat and turn the mixture into a bowl. Stir in the remaining filling ingredients, stirring well to combine. Set aside.

Brush a large frying pan with a little oil and place over moderate heat. Holding a tortilla between your thumb and forefinger, dip into the chilli sauce. Shake off any excess then carefully arrange the tortilla in the hot frying pan and fry for 30 seconds per side.

Using a spatula or tongs transfer the cooked tortilla to a large plate. Spoon 1 tbsp of the filling into the centre and roll up like a Swiss (jelly) roll. Arrange the roll in a large, greased, baking dish. Set aside to keep warm whilst you stuff the remaining tortillas in the same way.

When all the tortillas have been stuffed, pour the remaining sauce over them and sprinkle over the grated Parmesan. Put the dish into the oven and bake for about 18 minutes, or until the sauce has browned and is bubbling. Remove from the oven and serve immediately.
