Collard Greens

This is a recipe for the classic Southern American "Mess o'Greens" which, itself is based on greens recipes brought over with African slaves. Indeed, greens-based stews remain a staple of the West African diet today.

Ingredients:

900g collard greens
2 ham hocks
salt and black pepper to taste

Toppings, such as: hot pepper sauce, vinegar, onions in vinegar, salsa, halved cherry tomatoes

Method:

Wash the greens very thoroughly, preferably soaking them in at least four changes of water. Remove any yellowed leaves and any of the harder stems.

Place the ham hocks in a large pot and add enough water to cover them. Season with salt, bring to a boil and cook for 30 minutes before adding the greens. Begin with the larger leaves, leaving the liquid to return to the boil before adding the remaining leaves. Reduce to a simmer, cover and cook for 45 minutes, stirring occasionally to ensure thorough cooking.

After about 45 minutes test for tenderness by piercing with a knife. Continue cooking if not ready. Drain the greens, (reserving the liquid) then shred the leaves. Place in a serving dish and add a little of the cooking liquid. Season to taste and serve immediately, with your choice of toppings.
