Salsa de Cacahuete con Pollo (Peanut Sauce with Chicken)

Salsa de Cacahuete con Pollo: An Equatorial Guinean recipe for a classic dish of chicken and prawns in a peanut and tomato sauce with onion.
Ingredients:
3 tbsp peanut butter (or peanut paste)
1kg whole chicken
250g prawns
150g onions, finely chopped
100g tomatoes, chopped
2 tbsp oil for frying
400ml water
salt and freshly-ground black pepper, to taste
Method:
Joint the chicken and cut into serving-sized pieces. Season these pieces with salt and black pepper then set aside.
Add the oil to a pan and use to fry the onions for about 4 minutes or until soft but not coloured. Stir in the tomatoes and then the peanut butter. Cook the mixture, stirring constantly, for 1 minute then stir in the eater.
Add the chicken and bring the mixture to a boil. Reduce to a simmer, cover the pot and cook for about 30 minutes or until the chicken is just cooked through.
Add the prawns and cook for about 8 minutes more or until they turn pink.
Serve hot accompanied by boiled and mashed bananas, cassava or taro tubers, rice or fufu.
