In essence, this is a guacamole but made with peanut butter rather than tomatoes and including fiery habanero chillies rather than jalapeños. This is a traditional Equatorial Guinean accompaniment to fish dishes, particularly barbecued fish

Ingredients:

2 avocados
100g peanut butter
2 habanero chillies, de-seeded and very finely diced (or to taste)

Method:

Halve the avocados and remove the pits. Scoop out the flesh and mash coarsely then add the peanut butter and the chillies and mash until smooth.

Cover and refrigerate for at least 1 hour to allow the flavours to develop.

Serve slightly chilled to accompany fish and barbecue dishes.
