Green Fig Salad

In Saint Lucia, green (ie unripe) bananas are known as green figs and they are often used as a base for fish or, as here, turned into a salad or salsa.

Ingredients:

juice of 1 lime
2 bell peppers, diced
1 onion, chopped
6 green bananas (green figs)
250ml oil
1 egg, boiled and chopped
Mayonnaise
Salt
Black pepper

Method:

Bring a pan of lightly-salted water to a boil add the green bananas (unpeeled) and cook for 10 minutes. After this time, drain the green bananas and set aside to cool until they can be handled. Peel then dice and add to a bowl. Toss with the lime juice to help prevent discolouring.

Add the onions, bell peppers and egg. Stir to combine then add mayonnaise to your liking.

Season to taste with salt and black pepper then transfer to the refrigerator to cool.

Serve chilled.
