Tomato and Herb Salsa is a modern British recipe for a classic salsa made from a blend of tomatoes, basil leaves and flat-leaf parsley with lemon thyme and red wine vinegar that is excellent with grilled meats. Ingredients:
400g vine-ripened tomatoes, each sliced into eight wedges
1/2 red onion, finely diced (optional)
1 handful of fresh basil leaves, chopped
1 handful of fresh flat-leaf parsley leaves, chopped
2 tsp lemon thyme leaves, chopped
1 1/2 tsp red wine vinegar
salt and freshly-ground black pepper, to taste
Method:
Combine all the ingredients in a bowl and mix until thoroughly combined. Cover and set aside to allow the flavours to infuse for at least 20 minutes before serving.
