Chopped Liver with Zhoug
Chopped Liver with Zhoug is a traditional Jewish recipe for a classic starter or dip of a loose-pate made from a blend of chopped liver and eggs mixed with zhoug herb salsa which makes an excellent dip for New Year. The combination of chopped liver and egg with zhoug, a traditional Jewish fresh herb salsa makes a loose pâté that is excellent for sharing at parties, particularly New Year events.
Ingredients:
For the Zhoug:
1 tsp cumin seeds
4 large, mild, green chillies, de-seeded and finely chopped
8 tbsp flat-leaf parsley, finely chopped
8 tbsp coriander (cilantro), finely chopped
1 garlic clove, minced
125ml olive oil
For the Livers:
4 tbsp olive oil
1 onion, chopped
500g chicken livers, cleaned and trimmed
4 hard-boiled eggs, peeled
salt and freshly-ground black pepper, to taste
sweet paprika, for dusting
matzo crackers, to accompany
Method:
For the zhoug, heat a small frying pan over medium heat. Add the cumin seeds and toast for 30 seconds, until fragrant. Turn into a mortar and crush then transfer to a small food processor and add the chillies, parsley, coriander and garlic. Blend the mixture to a rough paste then slowly add the olive oil until well blended.
Turn into a bowl and refrigerate. If stored in an air-tight jar this will keep for up to two weeks.
For the liver, heat 2 tbsp of the olive oil in a large frying pan. Add the onion and fry for about 6 minutes, or until soft and lightly golden brown in colour. Turn out onto a plate and set aside.
Season the livers well with salt and black pepper. Heat 1 tbsp of the remaining olive oil over hight heat and use to cook half the livers for about 3 to 4 minutes. Set these aside, add the remaining olive oil and fry the remaining livers.
Finely chop the fried livers and combine with the onion and the chopped eggs. Adjust the seasoning to taste then place in a serving dish and dust with the paprika.
Serve accompanied by the zhoug and matzo crackers.
