Matzo Crackers

Also known as matzoh crackers or matzah crackers, these unleavened Jewish breads make an excellent accompaniment to dips of all kinds and go particularly well with chopped liver with zhoug.

Ingredients:

240g strong white bread flour
120g plain flour
1/2 tsp sea salt
3 tbsp extra-virgin olive oil
250ml water

Method:

In a bowl, mix together the flours, salt and olive oil.

Work in enough of the water to yield a thick dough. Turn out onto a floured work surface and knead briefly, until smooth and elastic. Place in a bowl, cover and set aside to rest for 15 minutes.

After this time, divide the dough into 16 equal-sized pieces. Taking each one in turn, roll out into circles about 16cm in diameter (they should be paper thin and you should be able to see the colour of your work surface through them).

Carefully transfer to ungreased baking trays then prick all over with a fork (this helps prevent the flatbreads from curling during baking).

Transfer to an oven pre-heated to 230°C and bake for about 2 minutes. During this time, watch the matzo crackers carefully, as they will burn quickly. After 2 minutes turn over and bake on the other side for about 2 minutes more.

Ideally the surface should blister so that you have speckles of brown on both surfaces.

Remove from the oven and allow to cool on a wire rack. As you take each batch of matzo crackers from the oven, replace with your next batch.

If you have a pasta roller, you can make thin rectangular matzo crackers by passing the dough through the pasta maker. You can also buy ready-made matzo dough perforators, essentially a roller with multiple rows of spikes on it.
