Salata Méchouia Nablia (Grilled Red Pepper, Chilli and Tomato Salad)
Salata Méchouia Nablia (Grilled Red Pepper, Chilli and Tomato Salad) is a traditional Tunisian recipe for a classic salad of charred and peeled red bell peppers and chillies chopped in a food processor with tomatoes, caraway seeds, garlic and olive oil that's typically served slightly chilled. To Western eyes this disk looks more like salsa than a salad. But in Tunisia it's treated as a salad and this is how you should use it as well.
Ingredients:
500g whole red bell peppers
2 large red chillies
3 ripe tomatoes
1 tbsp caraway seeds
4 garlic cloves, peeled
3 tbsp olive oil
sea salt, to taste
Method:
Place the peppers and chillies either on a hot grill, a griddle pan or in the flame of a gas hob and cook, turning frequently, until the skins begin to blister and blacken. Place in a bowl, cover with a plate and allow to soften in their own steam until cool enough to handle. Peel them then de-seed and set aside.
Blanch the tomatoes in boiling water then peel and place in a food processor along with all the other ingredients. Pulse until the vegetables are roughly chopped. Season with the salt, tip into a bowl then chill in the refrigerator and serve.
This is often served garnished with either black olives of flaked tuna and back olives.
