Vegetable shortening is a vegetarian alternative to lard. This is a solid fat made from hydrogenated vegetable oils, typically a blend of palm oil and soybean oil (though it tends to be palm oil and rapeseed oil in UK versions such as Trex).

In the US, Crisco is the commonest and most well known brand. In the UK, vegetable shortening is not so common, though most supermarkets carry Trex. Margarnie, being vegetable based can be used as a partial substitute, though as margarine typically contains 20% water you will need to add an extra tablespoon of margarine for every 225g (1 cup) you use. If you're not vegetarian, then by far the best substitute for shortening is lard (lard is 100% animal fat).
