If you're in North America, this is a home made replacement for 'Bisquick'. If you're elsewhere in the world you can use this for any recipe requiring 'Bisquick' or buttermilk baking mix.

Ingredients:

1.8kg unbleached flour
280g plain flour
100g nutritional yeast
200g oat flour (render regular oatmeal to a flour in a blender)
300g dried buttermilk powder
2 tbsp salt
2 tbsp sugar
2 tbsp baking soda
6 tbsp baking powder
500g shortening
180g unsalted butter or margarine

Method:

Mix together the oatmeal and nutritional yeast then add the plain flour and mix thoroughly. Add the salt, baking soda, baking powder and the sugar then blend-in the buttermilk powder. Mix thoroughly until the mixture is uniform. Sifting through a sieve is a good way of obtaining an even blend. Then add the unbleached flour and repeat the mixing process.

In a large bowl (or food processor) cut together 1/3 of the flour mix along with 1/3 of the shortening and 1/3 of the butter until it resembles fine breadcrumbs. Set aside and and repeat until all the mixture is used. Once complete mix the three batches together then divide for storage. Store in a tightly-closed container either in the fridge (if you're going to use the mixture soon) or in the freezer. When ready to use simply spoon the mixture out and measure the quantity you need.
