Serim (Baked Dough with Yoghurt) is a traditional Armenian recipe for a classic dish of milk-based pastry that's rolled out very thin, then partly dried before being rolled, stacked and drizzled with yoghurt. This dish is also known as surim or surum and a variant topped with cheese is served as a vegetarian main course. This version of the recipe, however, if for a dessert.
Ingredients:
For the Dough:
280g flour
1 egg
1 tbsp butter or shortening
60ml milk mixed with 60ml water
1/2 tsp salt
For the Sauce:
115g butter
1l plain yoghurt
35g mixed cornflour and plain flour
Method:
Sift the flour and salt into a bowl. Add the butter and rub in with your fingers then mix in the egg. Add half the milk and water mix and stir to combine. Now add the remaining milk and water mix a little at a time until the mixture comes together as a dough. Turn onto a lightly-floured surface and knead until smooth and elastic. Cut the dough into eight equal pieces then place in a bowl, cover and set aside to rest for 60 minutes.
At the end of this time roll each piece of dough with a very long rolling pin until it's the size of the base of your oven (dust with the mix of cornflour and plain flour whilst rolling). When each piece of dough is rolled out drape over the rolling pin, carry to an oven pre-heated to 190°C and bake directly on the base of the oven for no more than 2 seconds per side (leave the oven door open whilst cooking). As soon as you remove the dough from the oven roll up quickly into long strips then cut into 5cm pieces. Stack these rings in a roasting tin with the cut sides facing down (basically you will have little towers into which you can pour the yoghurt mix.
Once the pastry is done, melt the butter and pour over the top of the pastry rounds. Beat the yoghurt until smooth then pour evenly over the contents of the roasting tin. Transfer to your pre-heated oven and cook for 15 minutes, or until the yoghurt is warmed through. Serve immediately.
