Nthochi II (Malawi Banana Bread): the classic Malawian banana cake of bananas in a flour batter base baked in a loaf tin and sliced. As well as the small local bananas this is also prepared with over-ripe plantains (about 500g) that are cooked by boiling and cooled before bring used in this recipe
Ingredients:
100g margarine, shortening or butter
200g sugar
400g flour
1 egg
240ml milk
1 tsp baking powder
1 tsp salt
5 very ripe bananas, mashed
Method:
Cream together the margarine or butter with the sugar until light and fluffy then beat-in the egg and add the flour, salt, baking powder and milk. Mix thoroughly then mash-in the bananas and stir to incorporate. Pour the resulting batter into a well-greased loaf tin and bake in an oven pre-heated to 170°C (325°F/Gas Mark 3) for about an hour, or until golden brown in colour and a skewer inserted into the centre of the loaf comes out clean.
Allow to cool a little, tip out of the tin onto a wire rack and allow to cool completely before slicing.
