Fassoulia (Green Bean Stew) is a traditional Armenian recipe for a classic stew of lamb or beef with green beans cooked in a tomato-based sauce flavoured with saffron, turmeric and cinnamon. Ingredients:
900g lamb or beef, chopped
500ml water
2 tbsp butter
3 onions, finely minced
900g tomatoes, blanched, peeled and quartered
900g green beans, trimmed and halved
1 tsp ground turmeric
1 tsp ground cinnamon
pinch of saffron
salt and freshly-ground black pepper, to taste
500ml passata (tomato juice) mixed with 250ml water
Method:
Combine the meat and water in a pan, bring to a boil then reduce to a brisk simmer and continue cooking until the water has evaporated away. Now stir-in the butter and onions. Fry the meat and onion mix until the onions are golden (about 10 minutes).
Stir-in the tomatoes and beans along with the spices. Cook for 5 minutes then add the tomato juice mix. Season with salt and black pepper and bring to a boil. Reduce to a simmer and cook gently for about 35 minutes, or until the sauce has thickened and the meat and beans are tender, adding more hot water, as needed.
