Tamari is a form of soy sauce that's made without wheat. As a result it's free of gluten and is suitable for those with wheat allergies or coeliac disease.
Tamari is very dark in colour and has a much richer flavour than ordinary soy sauce. As a result it's very useful in marinades, dressings and dips. Though nowhere near as flavourful, dark soy sauce can be used as a substitute.
