Boïri (Maize Dumplings)

Boïri (Maize Dumplings) is a traditional Guinean recipe (from Guinea-Conakry) for a classic vegetarian meal of maize dumplings served with curd cheese flavoured with tamarind that is commonly eaten during Ramadan. This dish is most commonly eaten during the month of Ramadan to break the day's fast.

Ingredients:

200g maize meal
1.5 to 2l water (depending on how dry the maize meal is)
sugar, to taste
1 ball of tamarind pulp
curd cheese

Method:

Pour the maize meal into a large bowl then work in enough water to give a stiff dough. Tear off pieces of this dough and shape into small balls (think pellet size). Set aside to sun dry (though commonly made at home and dried for a few days before storing) the boïri pellets can also be bought commercially.

Bring a large pot of water to a boil, and whilst stirring constantly add the maize pellets in a steady stream. This means that the boïri will not stick together in the pan.

Reduce to a simmer, and cook, stirring occasionally, for 30 minutes. Five minutes before the boïri is due to be ready, stir in the sugar and tamarind pulp to flavour.

Serve accompanied by curd cheese beaten until smooth. To serve, ladle the boïri into a bowl, top with the curd cheese and eat.
