Hot Green Tamarind Chicken

Ingredients:

1.5kg whole Chicken cut into Large Pieces
4 Garlic Cloves, peeled
1 Green Pepper, de-seeded & roughly chopped
12 Hot Green Chillies, sliced
4 Kaffir lime leaves
1 lemongrass Stalk, crushed
2 small Onions, chopped
1½ tsp Sea Salt
2 tsp Tamarind Paste
1 Tomato, roughly chopped
10 tbsp Vegetable Oil

Method:

Thoroughly mix the Tamarind Paste with 1 tsp of the salt and 2tbsp of water. Pour over the chicken in a bowl and rub into the flesh. Leave to marinade for an hour.

Put the green bell pepper, chillies, onions, garlic and tomato in a blender and blitz to a paste. Heat the oil in a large frying pan and when hot add the chicken with its marinade. Cook until browned then remove and put to one side.

Remove half the oil. then add the blended paste, crushed Lemongrass and Kaffir Lime Leaves and stir-fry for about 6–7 minutes.

Return the chicken to the pan, along with 300ml of water and 12tsp of salt and bring to the boil. Cover, turn then reduce to a low simmer and cook for 20–25 minutes stirring occasionally. Serve immediately.
