This is a variant of the traditional Thengai Chammanthi/Kerala Coconut Chammanthi that reduces the chillies and omits the red Kashmiri chilli, adding a little jaggery and which makes an excellent sweet bite for Diwali.

Ingredients:

75g (1 cup) freshly grated coconut
2 tbsp tamarind pulp
4-5cm (2 in) piece of ginger
2 whole red chillies
2 tbsp jaggery
Salt to taste

Method:

Combine all the ingredients in a blender or food processor and render to a paste. Add a little coconut oil if too dry. Divide into six equal pieces and shape into balls. Sit each one on a cupcake paper and serve.
