A Devon/Cornwall favourite, clotted cream is made by heating normal cream to evaporate some of the liquids. Proper clotted cream has at least 55% butter fat and it's this that gives it it's distinctive pale yellow colour. As a result of the evaporation process clotted cream is thick and rich and has the consistency of soft butter.
