Ys du (Bilberry Tart)

Ingredients:

250g fresh bilberries (or use blueberries)
200g sugar (less if using blueberries)
250g rich shortcrust pastry (enough for the base of a 20cm diameter pie plate)
double cream (or clotted cream), to serve

Method:

Wash the bilberries then turn into a saucepan with the sugar. Heat gently until the fruit begins to burst (about 20 minutes) then increase the heat to a simmer and stew gently for about 20 minutes more, or until the fruit have broken down and the mixture is thick.

Turn the pastry onto a floured work surface and roll out until thin enough to cover your pie plate (trim off any excess). Prick the base a few times with a fork then pour in the bilberry mixture. Transfer to an oven pre-heated to 180°C and bake for about 25 minutes, or until the filling is beginning to set and the pastry is golden brown around the edges.

Remove from the oven and allow to cool a little. Serve warm with plenty of cream or clotted cream.
