This is a traditional dessert from Cornwall made from local apples and clotted cream (of course) that's served with local strawberry jelly.
Ingredients:
6 Apples
3 tbsp Cornish clotted cream
1 tbsp Lemon juice
5 tbsp caster sugar
2 tbsp strawberry jelly
Method:
Core the apples, arrange on a baking tray then transfer to an oven pre-heated to 200°C. Bake for about 20 minutes until soft.
Scoop out the insides of the apple then pass through a fine-meshed sieve to puree. Turn into a bowl and mix in the clotted cream and lemon juice. Beat in the sugar until completely dissolved.
Place the bowl in the refrigerator and chill for at least 2 hours.
Divide between serving bowls, add a dollop of strawberry jelly in the centre.
