This is a continuation of an entire series of pages that will, I hope, allow my visitors to better navigate this site. As well as displaying recipes by name, country and region of origin I am now planning a whole series of pages where recipes can be located by meal type and main ingredient. This page gives a listing of all the Ghee recipes added to this site.
These recipes, all contain Ghee as a major wild food ingredient.
Ghee is a form of Clarified Butter that's simmered until all the moisture evaporates and the milk solids begin to brown, giving the resulting butter a nutty, caramel-like flavour and aroma. This final step of cooking gives ghee its distinctive taste and also provides ghee with a longer shelf life and a much higher burning point than other clarified butters, which makes it practical for use in just about any sautéing and frying uses.
